Recipe: Oysters Rockefeller

National Oyster Day is right around the corner (August 5) and what better way to celebrate than with the classic dish, Oysters Rockefeller? MRKT Sea + Land at Aliante Casino + Hotel + Spa offers a delicious rendition of this dish which incorporates fresh ingredients right from the in-restaurant vertical herb garden.

Ingredients

12 fresh, unopened oysters

1/2 cup butter

1 onion, chopped

10 ounces chopped fresh spinach

8 ounces Monterey Jack cheese, shredded

8 ounces fontina cheese, shredded

8 ounces mozzarella cheese, shredded

1/2 cup milk

2 teaspoons salt or pepper to taste

2 tablespoons seasoned bread crumbs

Directions

1. Shuck oysters and break off and discard the top shell. Arrange the oysters on a baking sheet. Preheat oven to 425 degrees F (220 degrees C).

2. Melt butter in a saucepan over medium heat. Cook onion and garlic in butter until soft. Reduce heat to low, and stir in spinach, Monterey Jack, fontina, and mozzarella. Cook until cheese melts, stirring frequently. Stir in the milk, and season with salt and pepper, sauce should be like a thickened volute sauce. Spoon sauce over each oyster, just filling the shell. Sprinkle with toasted bread crumbs.

3. Bake until golden and bubbly, approximately 8 to 10 minutes.

For extra flavor, try a toasted herb buttered panko-style breadcrumb
